Marie’s version: Oatmeal Raisin Cookies


raisin oatmeal cookies marieSince my husband has a diabetes which he got genetically, I have been always careful with the food I cook for him. He loves desserts which is not good for his diabetes as it has high in sugar content. So for him to enjoy his desserts, I look for alternative ways to make it fit for his diabetes. In some ways, I feel happy about it as I am also into a very good healthy diet so it was easy for me to get back in shape after two months from my childbirth. I want to share my version for a healthy and less sugar Oatmeal Raisin Cookies. So here’s what you need:

1/2 cup salted butter melted
1 tbsp vanilla
2 eggs

Dry ingredients:
1/2 cup white flour
1 cup quick oatmeal
1 tbsp white sugar
1/2 tbsp baking powder
1/2 cup raisins

Optional:
1/4 cup honey-dipped walnut

Steps:
1. Mix all dry ingredients except for the raisins and walnut.
2. Add the eggs, vanilla and salted butter
3. Mix all using a mixer as it might be hard to mix it all with just using ladle.
4. Add the raisins and walnuts.

raisinoatmealcookiesIn a flat baking pan, measure 1 tbsp of the cookie mixture and shape it into circles.

Heat your oven first before baking the raw cookie mixture. Bake for 30minutes under 180 degree Celsius or until you see it turns little bit brown.

This Oatmeal Raisin Cookies is crispy but not so dry.
